Cloud Cakes

Leesa was telling me the other day about how much she loves her Women’s Weekly Cupcake cookbook. It was only when I was looking through my bookshelf this afternoon that I realised I have the same one so it was time to do some baking!

Cloud Cakes

I chose to make cloud cakes which are strawberry (I used raspberry) and vanilla cupcakes with a meringue type icing. The recipe is so much better than the Magnolia cupcake recipe I used last time. The Magnolia recipe had heaps of butter and sugar in it – a heart attack waiting to happen. These had much less butter and less sugar and were really light and fluffy. You can find the recipe here.

Leesa will probably say I cooked them too long because they are too brown on top but I’m still trying to figure out the temperature on my stupid oven. They tasted great anyway, if I do say so myself :P

    Haha!! I love your reference to me in your blog!! Thanks for the airtime!!! hehe!! I think they look fine- they raised quite a bit (in a good way) and look a little like muffins… they look pretty with the frosting.. Was your frosting a cooked one or uncooked? It looks like a marshmallow frosting I’ve made before… Glad you liked them… GREAT B-day CUPCAKES!!

    The frosting is uncooked. You make sugar syrup and then pour the hot syrup into beaten egg whites. You beat it for 10 minutes until it cools.

    It’s quite sweet and kinda sticky. I’ve never made anything like that before. It was unusual but in a good way :)

    Forgot to say that I did half with raspberry jam and half without jam because I don’t like jam that much and thought it would be too sweet. But in fact the jam ones turned out really well as they were much more moist.

    Ferbent loved the jam ones and wants me to make more but with different flavours. He’s like, ‘you can do them with strawberry and apricot and orange…’.

    I think I know the frosting… I’ve made something that looks like that … and it kinda tastes like marshmallow… is that right?

    I love to cook I just don’t post about it much.

    Leesa – yeah, I guess it’s like marshmallow. It wasn’t bad but I don’t think I’ll make it again. Too sweet for me.

    Yeh… it’s way to sweet for me, too.. I prefer ganache.
